UW Meat Laboratory recalls some meat as precaution

The University of Wyoming Meat Laboratory, in cooperation with Consumer Health Services of the Wyoming Department of Agriculture, is recalling some of its ready-to-eat hams and summer sausage.

During a routine inspection, it was found the university's records cannot confirm these products were cooked to the proper time and temperature parameters.

"We believe our procedures ensure proper cooking, but the records were incomplete," said Warrie Means, laboratory supervisor and associate professor of meat science in the UW College of Agriculture's Department of Animal Science. "There have been no reports of persons being affected by consuming these products; however, out of an abundance of caution, the meat is being recalled."

UW has addressed the recordkeeping issue to assure continued safe processing of meat, Means said. The Meat Lab regularly sells products from livestock raised on the university's farms operated to support UW's educational mission.

The hams being recalled were processed between Feb. 8, 2006, and April 29. The summer sausage being recalled was processed between Nov. 18, 2006, and Dec. 11, 2006. If you have any of the recalled products, please dispose of the product or return it to the University of Wyoming Meat Laboratory.
