Workshop gets folks barbecue-ready for Memorial Day

Memorial Day ranks as one of the most popular occasions for barbecuing. Thanks to the Food & Agricultural Products Center, Oklahoma Beef Council, Oklahoma Pork Council and Oklahoma Poultry Federation, 49 barbecuers are more ready than ever to light their grills.

Participants from Arkansas, Kansas, Oklahoma and Texas recently came to the FAPC on the campus of Oklahoma State University to take part in a certified barbecue judging class.

"In addition to gaining valuable judging experience and improving their taste-testing skills, the participants received a certified judging manual and earned a judging badge," said Chuck Willoughby, FAPC business planning and marketing specialist.

Ed Roith of the Kansas City Barbeque Society taught the class. The KCBS is the world's largest barbecue and grilling association sanctioning 150 contests across the United States each year, according to the KCBS.

Avid Memorial Day barbecuers Jerry Hickman Sr., of Oklahoma City and his wife, Cynthia, attended the class.

"I enjoy barbecue and cooking in my backyard," Jerry Hickman said. "I thought this would help me to be a better cook as well as give my wife and I something to do together by judging contests."

Stillwater resident and workshop attendee Pete Gulczynski has been an amateur barbecue contest judge for a while.

"I have judged several competitions and wanted to be a certified judge," Gulczynski said. "I now have learned the official rules to be a certified KCBS judge."

The FAPC has worked with more than 30 Oklahoma brands of barbecue sauce--all very good tasting and of high quality, Willoughby said.

"Many Oklahoma grocers will carry up to 10 or 12 Oklahoma brands outnumbering the national brands on the shelf approximately 3-to-1."

These local brands, while typically costing more than the national brands, appeal to local consumers' tastes and preferences, Willoughby said.

"There is a love affair between local brands and the typical grill master or smoke king in Oklahoma," Willoughby said. "This event should appease everyone's appetite for good barbecue and teach the fine intricacies of judging barbecued meats."
