Mouth-watering memory

Here's my rule:

If I'm still thinking about something I ate weeks ago, it was good--really good.

While attending the Cattle Industry Convention in Nashville three weeks ago, I ate a phenomenal steak at Fleming's Prime Steakhouse.

I'm not talking about just any steak, mind you. It was a bone-in Kansas City strip that still has me nearly drooling on the keyboard.

It was that literal melt-in-your-mouth steak. It was full of real beef flavor and nothing artificial. It was aged perfectly--not a day too short or too long. It was so juicy I ended up with it splattered all over the front of my new blouse and I didn't even care. That's how good it was. It was worth the dry cleaning bill.

Sure, there's more to a good dining experience than a great steak--great company, warm atmosphere, courteous service. A good glass of wine never hurts either.

It all just seems to fall into place and leaves you fondly remembering the experience for a long time.

But it takes so much more than it appears. For the restaurateur, planning every little detail is all a part of the business. From the perfectly shaped plates that hold the crisp greens of the salad course to the right subtle lighting to set the mood--every facet influences the experience.

Thankfully, there are great restaurants like Fleming's, that offer the products that we produce to the consumer in an unforgettable way.

And thankfully, the cattle industry has the Beef Backer award to recognize the vital role restaurants play.

At the 2007 Cattle Industry Convention, three restaurants were recognized for their commitment. This year's national winners included Buckhorn Steak and Roadhouse (Winters, Calif.), O'Charley's (Nashville, Tenn.) and Mortimer's (Boise, Idaho). Most individual states also have Beef Backer awards to recognize local restaurants that showcase beef products.

No matter what products you produce, remember to say, "Thank you," to the restaurants that make dining a mouth-watering memory.
