Grandma's Chocolate Layer Cake

Ingredients:
1 cup unsweetened cocoa
2 cups boiling water
2 3/4 cups flour, sifted
2 teaspoons baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
1 cup butter, softened
2 1/2 cups sugar
4 eggs
1 1/2 teaspoons vanilla
1 cup heavy cream, whipped
1/4 cup powdered sugar
1 teaspoon vanilla
1 (6 oz.) package semi sweet chocolate chips, melted
1/2 cup half and half
1 cup butter, softened
2 1/2 cups powdered sugar



Directions: Combine cocoa with boiling water, mixing well with wire whisk until smooth. Cool completely. sift together flour, baking soda, baking powder and salt. Set aside. Beat butter, sugar and eggs. Add vanilla. Alternately add flour mixture and chocolate. Grease and flour three 9 x 1 1/2 inch round layer pans. Divide batter equally and spread in pans. Bake at 350°F for 25-30 minutes. Cool completely. Layer filling: Mix together cream, 1/4 cup powdered sugar and 1 teaspoon vanilla. Place one cake on a plate. Spread filling over top. Place second cake on filling. Spread filling over top. Frosting: Mix chocolate chips, half and half, 1 cup butter and 2 1/2 cups powdered sugar. Spread frosting over top and sides of cake. Refrigerate.

Notes: This rich, delicious cake was my paternal Grandmother's recipe. It was always requested as a special birthday treat!
