Oatmeal Cake

Ingredients:
1 cup quick cook oats
1 stick butter
1 1/4 cups boiling water
1 cup sugar
1 cup brown sugar
2 eggs, beaten
1 1/3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
6 tablespoons butter
1/2 cup cream
1/2 cup sugar
1/2 teaspoon vanilla
1 cup nuts
1 cup coconut



Directions: Mix together oats, 1 stick butter, and boiling water. Let stand 20 minutes. Add sugar, brown sugar and eggs. Sift and mix flour, salt, baking soda, nutmeg and cinnamon. Pour into a 13x9 inch ungreased cake pan. Bake at 350°F for 20 minutes, or until firm to touch. Topping: Mix together 6 tablespoon butter, cream, 1/2 cup sugar, vanilla, nuts and coconut. Heat in saucepan bringing to a boil for approximately 5 minutes. Spread on warm cake and brown under broiler.

Notes: I have had this recipe for over 25 years. I'm known among friends and family for my delicious oatmeal cakes.
