Company Scalloped Potatoes

Ingredients:
6 tablespoons butter
6 tablespoons flour
3 cups milk
1/2 pound American cheese
salt to taste
pepper to taste
5 lbs. potatoes
1 to 2 onions, sliced thinly












Directions: Melt butter in medium saucepan, add flour, heat until bubbly stirring constantly. Mix in milk, heat until warm, add cheese, heat until cheese is melted, add salt and pepper. Peel and slice potatoes. Layer potatoes and onions in a large casserole dish or roaster. Pour cheese sauce over all, cover and bake at 350°F for about 2 hours, or until potatoes are done. Yields 10 to 12 servings.
