Tomato Soup

Ingredients:
1/2 pound bacon, cut in small pieces
1 tablespoon butter
1 (small) onion
4 to 6 tomatoes, peeled & blended or 1 cup canned, blended tomatoes
2 teaspoons lemon juice
4 cups chicken stock
salt to taste
pepper to taste
brown sugar, to taste
1/2 teaspoon parsley flakes
1/4 teaspoon basil flakes
1/2 cup rice, uncooked








Directions: Heat bacon in pan until brown. Add butter and onion, saute until tender. Add blended tomatoes, lemon juice, chicken stock and seasonings. Add sugar if tomatoes are too tart. Add rice and cook on low heat until rice is tender, about 20 minutes.
