Salmon Croquettes

Ingredients:
1 (16 oz.) can salmon, drain about half the liquid
1/4 cup onion, chopped
2 eggs, beaten
3 tablespoons whole wheat bread crumbs
1/4 teaspoon thyme
1/4 teaspoon oregano
1/8 teaspoon garlic powder
salt and pepper to taste
1 cup flour
1/2 cup olive oil
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup chicken broth
salt and pepper to taste





Directions: Place salmon in large mixing bowl. Add onion and seasoning. Mix well. Add eggs, then bread crumbs. Form into small patties. Heat oil in heavy skillet. Dip patties into flour, shake off excess flour. Fry 2 to 3 minutes per side, until golden brown. Serve with Bechamel sauce made of butter, flour, milk and chicken broth. Melt butter in a heavy saucepan over medium heat. Add flour to hot butter to make a paste, remove from heat and cool. Heat milk and broth together, gradually add to cooled flour mixture. Return to low heat and cook 15 minutes. Stir often. Season with salt and pepper.
