Mexican Pizza

Ingredients:
1 lb. ground beef
1 (16 oz.) can tomatoes, undrained
1/2 cup onions, chopped
1 (6 oz.) can tomato paste
1/4 cup water
2 tablespoons chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
12 corn tortillas
2 cups sharp cheddar cheese, shredded and divided
1 cup lettuce, shredded
1 avacado, sliced
sour cream, (optional)







Directions: In a large skillet, brown the ground beef. Drain. Stir in the canned tomatoes and their juice, onions, tomato paste, water and seasonings. Simmer for 10 minutes. Cover the bottom and sides of a 14 inch pizza pan with the tortillas. Spread the meat sauce evenly over the tortillas. Bake at 350°F for 20 minutes. Remove from the oven. Sprinkle with 1 cup cheese and return to the oven. Continue baking until the cheese is melted. To serve, top with lettuce and the remaining cheese. Garnish with the avacado. Sour cream may also be used as a garnish.
