Beef Green Chili Enchiladas

Ingredients:
4-6 cups roast beef
1-15 oz. green enchilada sauce
1 can cream of chicken soup
1/2 cup broth from roast
1/4 cup milk
1/4 cup sour cream
shredded cheddar cheese
1 package flour torillas












Directions: Shred roast beef & set aside. Mix together enchilada sauce, cream of chicken soup & roast broth in a small bowl. Spread a 1/2 cup of sauce mixture in a 9x13 pan. Using 1 flour tortilla at a time, place 1/3 cup of roast & sprinkle with a little grated cheese at one end & roll up. Cut in half & put in pan. Repeat until entire pan is filled. Cover tortillas with remaing sauce & 1 1/2 cups of grated cheese. Cover & bake at 350 degrees for 30-40 minutes. Serve with additional sour cream and/or guacamole. Makes great use of left over pot roast.
