Karsynn's Crazy Carrot Cake

Ingredients:
2 cups sugar
3/4 cup buttermilk
3/4 cup cooking oil
3 eggs
2 teaspoons vanilla
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups carrots, grated
1 cup pecans, chopped
1-(8 oz.) can pineapple, crushed
1 (3 oz) can coconut, flaked
1-(8 oz.) package cream cheese
1/4 cup butter
1 1/2 cups powdered sugar
1/2 teaspoon vanilla



Directions: Mix together the sugar, buttermilk, oil, eggs and vanilla. Add and mix well flour, baking soda, salt and cinnamon. Next, add grated carrots, chopped pecans, drained pineapple and coconut until mixed throughly. Using a 9x13 inch pan, lightly spray with vegetable spray and flour. Bake in a 350°F preheated oven for 45-50 minutes. Let cool completely. To prepare frosting, mix together throughly the room temperature cream cheese, butter, powdered sugar and vanilla. Spread evenly over cooled cake and keep refrigerated.
