Avocado Salad

1 (3 oz.) package lime gelatin
2 cups hot water
1 medium avocado
1 (3 oz.) package cream cheese (may use low fat)
1/2 cup low fat mayonnaise
1/4 cup celery, cut fine
1/2 cup green pepper, chopped fine
a few drops onion juice
1 pinch salt

Directions: Mix gelatin with boiling water, let stand until it is partially set. Smash together the avocado and cream cheese. Add mayonnaise, celery, green pepper, onion juice and salt to the partially set gelatin and pour into a shallow pan. When completly set, (several hours) cut into squares and serve on salad plates. Makes 8 servings.

Notes: I serve this salad for a special dinner.
