Pumpkin Cookies with Penuche Frosting

Ingredients:
1/2 cup sugar
1/2 cup brown sugar
1 cup margarine, softened
1 cup pumpkin, canned
1 teaspoon vanilla
1 egg
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup nuts, chopped
3 tablespoons margarine
1/2 cup brown sugar
1/4 cup milk
1-1/2 - 2 cups powdered sugar




Directions: Cream sugars and margarine, blend in egg, vanilla and pumpkin. Sift flour, baking powder, soda, cinnamon and salt together and add to pumpkin mixture, mix well. Stir in nuts. Drop onto greased cookie sheet. Bake at 350°F for 10 to12 minutes. Cool. Prepare frosting, bring margarine and brown sugar to a boil, stirring constantly for 1 minute or until slightly thickened. Cool 10 minutes. Stir in milk, beat in powered sugar until smooth. Spread on cooled cookies.

Notes: These are really moist, soft cookies.
