Rice Dressing

Ingredients:
2 cups long grain white rice
5 cups chicken broth
1/2 stick butter
6 - 8 oz. chicken gizzards
3/4 cup onion, finely chopped
1 stalk celery, chopped
2 cloves garlic, chopped
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper











Directions: Chop gizzards into small pieces. Brown gizzard pieces in a large frying pan with 1/4 cup of the butter. Add the remaining butter, onion, celery, garlic and pepper. Cook for 5 minutes. Put rice, broth and gizzard mixture into a roaster pan or 9x13 inch pan sprayed with cooking spray. Cover tightly and bake at 350°F for 50 to 60 minutes until liquid is absorbed and rice is tender. Stir before serving.
