4 cups boiling water
3 cups miniature marshmallows
1 (15-1/4 oz.) can crushed pineapple (partially drained)
2 envelopes dry whipped topping (prepared according to package directions)
1 (6 oz.) box lime gelatin
1 (8 oz.) package cream cheese (room temperature)
Directions: Bring water to a boil in a large, heavy cooking pan. Stir in gelatin; add the miniature marshmallows and the cream cheese, which has been cut into small chunks. Simmer over low heat, stirring occasionally, until marshmallows and cream cheese are dissolved.
