Apricot Salad

1 package orange or apricot gelatin
1 cup hot water or hot apricot nectar
1 cup apricot juice (may use apricot nectar)
1 cup small marshmallows
1 cup diced apricots
1 cup crushed pineapple (optional)
1 slightly beaten egg
1 teaspoon flour
1/4 cup sugar
1/2 cup apricot juice or nectar
1/8 teaspoon salt (optional)
1/2 cup sour cream
grated cheese

Directions: Dissolve gelatin in hot water or nectar. Add apricot juice. Chill until partially set, then add fruit and marshmallows. Continue chilling until set. Cook 1 slightly beaten egg, 1 tablespoon flour, 1/4 cup sugar, 1/2 cup apricot juice or nectar and 1/8 teaspoon salt until thickened. Remove from heat; add 2 tablespoons butter. Let cool. Fold this mixture into gelatin and 1/2 cup sour cream. Top with grated cheese. Chill.
