Sweet Potato Casserole

Ingredients:
3 cups sweet potatoes, mashed (boil with skin on, skinned)
1/2 cup brown sugar
1/2 cup granulated sugar
1 stick butter or margarine
1/3 cup evaporated milk (not sweetened condensed milk)
1 tablespoon vanilla extract
1/2 cup orange juice
2 tablespoons orange rind, grated
1/2 teaspoon salt
2 eggs, beaten
TOPPING:
1/2 cup self-rising flour
3/4 cup brown sugar
3/4 cup pecans, chopped
1 teaspoon cinnamon
1/3 cup margarine, melted




Directions: Add beaten eggs to sweet potatoes, brown sugar, granulated sugar, butter, evaporated milke, vanilla, orange juice, orange rind, and salt. Pour in baking dish greased with margarine. For topping mix flour, brown sugar, cinammon, pecans. Melt margarine. Let

Notes: Mash potatoes with an electric mixer.The beaters will collect the ÒstringsÓ out of the potatoes.
