1/2 cup water
2 lbs. lean ground beef
4 stalks chopped celery
1 clove minced garlic
1 (large) diced onion
2 cups corn (fresh, frozen, or canned)
2 cups tomatoes (crushed, fresh or canned)
1 tablespoon chili powder
1 tablespoon chopped parsley (dry or fresh)
1 teaspoon black pepper
1/2 teaspoon salt (optional)
2 cups red kidney beans (canned or cooked)
2 cubes beef bouillon (optional)
Directions: Crumble ground beef into water in large Dutch oven or large pan. Brown slightly. Add celery, garlic, onion, corn, tomatoes, chili powder, parsley, pepper, salt, beans and bouillon. Mix and simmer for 1 hour, or bake at 325°F for 1 hour. Serve alone or over pasta or rice.
