Tamale Pie

Ingredients:
2 tablespoons shortening
1 lb. ground beef
1/4 cup shredded or finely chopped onion
1/4 cup shredded or finely chopped green pepper
2 cups tomato sauce
1/4 teaspoon salt
1/4 teaspoon pepper
4 teaspoons chili powder
1/2 teaspoon cumin
1/8 teaspoon garlic powder
1/8 teaspoon ground cayenne pepper
1/3 cup cornmeal
1/3 cup flour
1 teaspoon baking powder
1 teaspoon sugar
1/4 teaspoon salt
1 slightly beaten egg
1 teaspoon vanilla
1/2 cup milk
1 cup shredded Cheddar cheese

Directions: Brown ground beef in shortening. Add onion and green pepper. Drain off fat. Add tomato sauce, salt, pepper, chili powder, cumin, garlic powder and cayenne pepper. Pour mixture into a 9 inch baking dish. Combine cornmeal, flour, baking powder, sugar, and salt in mixing bowl. Combine egg, oil, and milk; stir into dry ingredients. Mix well. Stir in cheese. Pour over ground beef mixture in baking pan. Bake at 375°F for 30 to 35 minutes. Let stand 5 minutes before serving.

Notes: This freezes well, before baking or after its first baking.
