Skillet Meatloaf

Ingredients:
2 lbs. ground beef
2 cups crushed saltines
1 teaspoon prepared mustard
1/2 cup chopped celery
3 teaspoon Worcestershire sauce
1/4 teaspoon pepper
2 beaten eggs
1/2 cup ketchup
1/2 cup chopped carrots
1 onion, chopped
1/4 teaspoon salt









Directions: Mix ground beef, saltines, mustard, celery, Worcestershire sauce, pepper, eggs, ketchup, carrots, onion and salt, place in cold skillet, pat meat mixture firmly in skillet. Squeeze some ketchup and mustard in circle pattern on top of meatloaf. Close lid, (do not remove lid during entire time of cooking.) Start on medium-high heat, when lid is hot to touch, turn heat down to lowest setting and simmer for 20 minutes. Drain off any grease, before slicing meatloaf in pie wedges. Serve immediately.
