Ingredients:
1(8 oz) package cream cheese, softened
1(6 oz) package chocolate chips
1 egg
1/3 cup sugar
1/2 teaspoon salt
3 cups flour
2 cups sugar
1/2 cup cocoa
1 teaspoons salt
2 teaspoons soda
2/3 cup oil
2 cups water
2 tablespoons vinegar
1 teaspoon vanilla

Directions: Combine cream cheese, egg, 1/3 cup sugar, and 1/2 tsp. salt. Add chocolate chips and set aside. Sift together the flour, 2 cups sugar, cocoa, 1 teaspoon salt and soda. Add the oil, water, and vinegar. Mix until smooth. Fill paper lined cupcake pans 2/3 full with chocolate batter and top with a heaping teaspoonful of cream cheese filling. Bake at 350°F for 25 minutes. Makes 30 cupcakes.
Notes: This was one of my favorites that my mother made when I was young. It is my daughter's favorite, now.
