Ingredients:
1 cup uncooked rice
1 medium onion, chopped
1 medium green pepper, chopped
1 cup celery, chopped
1/2 cup margarine, melted
1 tablespoon sugar
1 tablespoon jalapeno, chopped
2 cans (17 oz.) creamed corn
1 cup mild cheddar cheese, shredded

Directions: Cook rice, set aside. Saute onions, peppers and celery in margarine until tender. Combine rice and sugar, jalapeno, corn and cheese. Stir well. Bake in glass dish at 350°F for 40 to 45 minutes.
Notes: Mild, medium or hot! It's your decision. Use the jalapenos accordingly!
