Banana Tea Bread With Oatmeal

Ingredients:
1 cup flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt (optional)
1/2 teaspoon vanilla (optional)
1/3 cup cooking oil
2/3 cup sugar
2 eggs
1 cup bananas (about 3), mashed
1 cup oatmeal
1/2 cup walnuts (optional)
1/2 cup dates, pitted (optional)








Directions: Combine flour, baking powder, baking soda and salt. In large mixing bowl place oil, sugar and eggs. Beat together until well blended. Add vanilla. Add half flour mixture and half bananas blending after each. Repeat the same step with the remaining flour mixture and bananas. Add oatmeal, blend. Allow batter to stand for 5 minutes. Pour into greased 5X9X3 inch loaf pan. Bake at 350°F for 1 hour. Add walnuts or dates if desired.
