Oatmeal Crisps

Ingredients:
1 cup shortening
1 cup brown sugar
1 cup granulated sugar
2 eggs, well beaten
3 cups quick cook oats
1 cup coconut
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 cup pecans









Directions: Grind or chop very fine, pecans and coconut. Thoroughly cream shortening and sugar; add eggs and vanilla, beat well. Sift dry ingredients; add to creamed mixture. Add oats, coconut, and pecans. Mix well. Shape into rolls. Wrap in foil or plastic wrap. Chill or freeze. Slice 1/4 inch thick; bake on ungreased cookie sheet at 350°F for 10 minutes. Makes 5 dozen.
