Cinnamon Rolls

Ingredients:
3/4 cup sugar
3/4 cup mashed potatoes
1 1/2 cups warm water
2 packages yeast
1/2 cup butter or margarine, softened
2 eggs
2 teaspoons salt
6 1/2 to 7 cups all purpose flour
whipping cream, optional
brown sugar, optional










Directions: Combine sugar and mashed potatoes in a large mixing bowl, add water and yeast, mix well. Cover and let rise in a warm place for 1 hour. Stir dough down, add butter, eggs and salt, then add flour gradually. Turn out onto a lightly floured surface, knead for 6 to 8 minutes or until smooth. Divide dough into halves, roll out to 12X13 inch squares, spread with butter, sprinkle with sugar and cinnamon. Roll up jelly roll style, slice and place in greased baking pan. Cover and let rise in a warm place until dough is double in size. Bake at 350°F for 35 to 40 minutes. Mix brown sugar with whipping cream, pour over rolls about 10 minutes before they are done, continue baking until they are golden brown.
