Sopa De Fidelo

Ingredients:
1 (8 oz.) package spaghetti
1 tablespoon shortening
1 pound ground beef
1/2 teaspoon salt
1 teaspoon pepper
3 cloves garlic, minced
2 cups onion, chopped
2 cups celery, chopped
1 cup water
1/2 cup green pepper, diced
1 (29 oz.) can tomatoes
1 1/2 cups whole kernel corn
1 tablespoon chili powder
8 ounces American cheese, grated






Directions: In a skillet or electric skillet, preheated to 300°F, saute spaghetti in shortening until lightly browned. Add meat, brown and drain. Stir in salt, pepper, garlic, onion, celery, water, green pepper, tomatoes, corn and chili powder. Lower heat to 200°F. Simmer 25 minutes, stirring occasionally. Top with cheese. Cook covered 5 minutes to melt the cheese.

Notes: I received this hearty recipe from my friend over eight years ago in a casserole dish as a wedding present.
