Cottage Cheese Potatoes

Ingredients:
6 cups potatoes, cooked and cubed
2 teaspoons salt
2 cups cottage cheese
1 cup sour cream
1/4 cup green onions, chopped
1 clove garlic
1/2 cup cheddar cheese, grated
2 tablespoons butter












Directions: Combine potatoes, salt, cottage cheese, sour cream, onion and garlic. Spray a 9x13 inch pan with non stick spray, put ingredients in pan (I use glass). Dot with the butter, top with grated cheese. Cook at 350°F about 30 minutes. Cheese should be melted and casserole bubbly. This makes an excellent side dish for baked chicken breasts.
