Friday's Potato Salad

Ingredients:
8 potatoes
6 hard boiled eggs, quartered
1 cup plain yogurt
6 ounces tuna, drained
1 cup canned mushrooms, drained
1 (large) onion, diced
1 (large) pepper, diced
1/4 cup lemon juice
1 teaspoon salt, optional
1 teaspoon black pepper
1 teaspoon paprika
1 red pepper, cut into strips
6 sprigs parsley







Directions: Cook, peel and dice potatoes. Place in large bowl with eggs, yogurt, tuna, mushrooms, onion, pepper, lemon juice, salt, pepper and paprika. Mix together until blended. Arrange red pepper strips and parsley on top. Refrigerate until serving time.
