Ingredients:
2 cups butternut squash
3 eggs
3/4 stick butter
1 teaspoon ginger
1/2 teaspoon nutmeg
1 cup milk
1 cup sugar
2 teaspoons coconut

Directions: Preheat oven to 350°F. Cook squash, mash, and drain. Combine ingredients in a large bowl and mix well. Bake in a greased casserole which has been set in a pan of water. Bake 45 minutes to 1 hour or until set. Serves 6 to 8.
Notes: Sweet potatoes work well for this too.
