1 pound ground beef
1.25 oz 1 package taco seasoning
1 onion, chopped
1 (15 oz.) can corn
1 (15 oz.) can yellow or white hominy
1 (15 oz.) can chopped tomatoes
1 (15 oz.) can Mexican style beans
1 (15 oz.) can black beans
shredded Cheddar cheese
Directions: Brown hamburger and onion. Add 1 pkg of taco seasoning. Then add: corn, tomatoes, Mexican style beans, hominy, black beans, etc. (Optional: add garlic, pepper, salt, and Texas grill or Cajun spice to your taste.) Simmer till hot. Serve in bowl with grated cheddar cheese on top and tortilla chips on the side.
Notes: Use your imagination and add to the base with any vegetables you prefer. I like to use the tortilla chips as a dip for my soup.
