Ingredients:
1 baked pie shell
1 cup powdered sugar
3/4 cup chunky peanut butter
1/3 cup cornstarch
2/3 cup sugar
1/4 teaspoon salt
2 cup half and half or milk
3 eggs, seperated
2 tablespoons butter
1 teaspoon vanilla

Directions: Mix together the powdered sugar and peanut butter until they reach the consistency of coarse cornmeal. Spread half of this mixture into bottom of baked pie shell. Combine all other ingredients except egg whites and cook over medium heat until thick, stirring constantly. Cool slightly and spoon mixture into the pie shell. Beat egg whites until stiff. Spread over pie and sprinkle with remaining peanut butter mixture. Bake at 350°F for 10 minutes or until meringue is set and lightly browned.
Notes: When I fix meals for the cattle working crew they say they always look forward to peanut butter pie.
