Sausage Muffins

1/2 lb sausage
1/2 red bell pepper,chopped
2 green onions, chopped
2 cups flour
1/4 cup sugar
1 Tablespoon baking powder
1/4 teaspoon salt
1/2 teaspoon dry mustard
1/3 cup oil
1 1/4 cup milk
1 large egg, beaten
1/4 cup melted butter

Directions: Brown sausage with pepper and green onion, drain. Combine dry ingredients, mix with egg, milk, and oil just till moistened - stir in the sausage. Fill muffin cups 2/3 full. Bake at 375°F for 20 minutes. During last 5 minutes, brush tops with 1/4 cup melted butter.

Notes: Good made ahead and reheated or will freeze well.
