Sausage Burritos

Ingredients:
1 lb. ground pork sausage
1 medium onion, chopped
1/2 green pepper, chopped
1 (small) can mushroom stems and pieces, drained
8 flour tortillas, warmed
6 eggs, beaten
1 cup cheddar cheese, shredded
salsa, optional












Directions: Brown sausage, drain leaving 2 tablespoons drippings. Add pepper, onions and mushrooms. Saute until tender. Spoon into bowl and set aside. In same pan scramble egg mix with sausage mixture. Spoon equal amounts in each tortilla. Sprinkle 2 tablespoons shredded cheese on each. Fold tortillas, serve with salsa. Makes 8 servings.
