Tortellini Gratin

Ingredients:
3/4 cup ricotta cheese
1 cup Parmesan cheese, freshly grated
1 cup whipping cream
1/4 teaspoon nutmeg, grated
1 lb. cheese tortellini
1/2 cup white breadcrumbs
1 tablespoon Romano cheese, grated
1 tablespoon olive oil
1 tablespoon fresh basil and oregano leaves, chopped (or 1 teaspoon dried)











Directions: Combine the ricotta, Parmesan, cream and nutmeg in a large havey-based pan. Heat slowly until smooth, stirring frequently. Cook tortellini in salted boiling water until tender, stirring frequently to prevent from sticking together. Just before tortellini are cooked, remove some of the cooking water with a ladle and add as much as necessary to cheese sauce to obtain a thin sauce consistency. Drain tortellini well, and add to cheese sauce. Allow to heat through, stirring constantly. Transfer the mixture to an oiled baking dish and sprinkle with the combined breadcrumbs, Romano, oil and herbs. Place under a preheated broiler and broil until the top is golden. Serve immediately.
