1 (7 oz.) package macaroni
1 lb. ground beef
1 medium onion, chopped
1 cup celery, sliced
1 clove garlic, minced
1 (7 oz.) can green chilies, diced
1 (16 oz.) can diced tomatoes, undrained
2 teaspoons instant beef bouillon
1/2 teaspoon seasoned salt
2 teaspoons ground cumin
1 (16 oz.) can tomatoes, crushed
1/3 cup picante sauce
2 oz. cheddar cheese, cubed
2 oz. Muenster cheese, cubed
Directions: Prepare macaroni according to package directions, drain. In large skillet, combine ground meat, onion, celery and garlic. Cook until meat is browned. Stir in all ingredients except cheeses. Simmer 10 minutes. Combine macaroni, meat mixture and cheeses. Pour into glass casserole. Cover. Bake in 350°F oven until cheese melts, about 20 minutes.
Notes: I like to divide this into two 8 inch square casseroles and freeze one.
