Toasted Oatmeal Raisin Bread

Ingredients:
3 to 3 1/2 cups flour
2 cups whole wheat flour
1/2 teaspoon salt
2 packages yeast
1 cup milk
1/4 cup honey
1/2 cup water
1 teaspoon cinnamon
1/4 cup margarine
2 eggs
1 1/2 cups old-fashioned oats, slightly toasted
2 cups raisins
1/2 cup walnuts, chopped







Directions: In a large bowl, mix 1 1/2 cups flour, salt and undissolved yeast. Combine water, milk, honey and margarine in a saucepan. Heat until very warm (120° to 130°F). Gradually add to the dry ingredients and beat for 2 minutes Add eggs, toasted oatmeal and 1 cup of flour. Beat for 2 more minutes on high speed setting. Stir in raisins, walnuts, cinnamon and additional flour to make a stiff dough. Knead for 8 to 10 minutes. Place in greased bowl, cover and let rise for 1 1/2 hours. Punch down dough and divide in half. Shape into 2 loaves and place in greased loaf pans. Cover and let rise 1 more hour. Bake in a preheated 350°F for 30 minutes. Take out of pans and brush with margarine.
