Ingredients:
1 medium zucchini
1 (7 oz.) can tuna
1-1/2 cups bread crumbs
1 egg
2 teaspoons onion, grated
1 teaspoon lemon juice
1/4 teaspoon salt and pepper
2 tablespoons salad oil
lettuce and small tomato, sliced

Directions: Shred zucchini, pat with paper towel in bowl, mix zucchini, tuna, bread crumbs, egg, onion, lemon juice, salt, pepper and salad oil. Shape into patties. Over medium heat, inn non-stick skillet, cook patties until brown on each side 8 to 10 minutes. Serve on lettuce with tomato slice on top.
