Ingredients:
1/2 cup celery, chopped
1 tablespoon onion, chopped
3 tablespoons butter, melted
2 tablespoons flour
1-1/2 cups milk
1 (tall) can salmon
1 cup bread crumbs
1 egg, beaten
1/2 teaspoon salt
1 tablespoon fresh lemon juice

Directions: In a small saucepan stir and cook, celery, onion and butter. Continue cooking and stirring, add flour and milk, cook until sauce thickens stirring constantly. Do not boil. Add to sauce, salmon, bread crumbs, egg salt and lemon juice. Mix together and place in lightly sprayed loaf pan. Bake about 1 hour at 350°F or until lightly browned. Garnish with the remainder of the lemon.
