Baked Potato Casserole

Ingredients:
5 medium pototoes, cleaned with skins on
2 tablespoons butter or margarine
1/2 cup onion, chopped
1 (8 oz.) package cheddar cheese, shredded
1/3 cup real bacon pieces
sour cream, optional














Directions: Prick potatoes and wrap in foil. Bake at 375°F for one hour. Lightly coat a casserole dish with cooking spray. When potatoes are done, unwrap and cut into cubes. Drizzle potatoes with butter or margarine. Evenly top with cheese, onion and bacon. Return to oven until cheese is melted, 15 to 20 minutes. Serve with sour cream if desired.

Notes: I have made this for get-togethers and it disappears quickly.
