Everything Pie

Ingredients:
1 pre-baked pie shell
3 egg yolks
3/4 cup sugar
1/4 teaspoon salt
3 tablespoons cornstarch
2 cups milk
1 lb. butter
1 teaspoon vanilla
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar
2/3 teaspoon vanilla








Directions: In a microwave safe dish, combine, egg yolks, sugar, salt and cornstarch. Add milk and stir. Cover with waxed paper and microwave on high 4 minutes. Stir mixture. Continue to stir at 30 second intervals until the mixture is thick. Add butter and vanilla. Pour in pie shell. Meringue: In a very clean bowl, beat egg whites and cream of tartar until soft peaks form. Slowly, add sugar, one tablespoon at a time. When mixture is shiny, add vanilla and put on cream pie and seal to the edge. bake at 350°F until lightly brown. Permit it to cool slowly. Store pie in the refrigerator.

Notes: This recipe is used to make most cream pies and is also used for puddings. For coconut pie, add 1/2-3/4 cup coconut. For peanut butter pie, add 1/2 cup peanut butter. For banana pie, add 2 thinly sliced bananas. For pineapple pie, add 1 small can well-dra
