Chicken Sopa

Ingredients:
4 lbs. chicken
1 medium onion, chopped
1 c. cream or half and half
1 c. chicken broth
2 c. tomato juice
1/2 lb. Velveeta cheese, cut up
1 small can chopped green chilies
1 bag Tortilla Chips












Directions: Boil chicken and cut into bite size pieces. Saute the chopped onion in butter until soft and then add the cream (or half and half), broth, tomato juice, velveeta and chilies. Stir over low heat until smooth. Add the chicken and mix well. Line a 13 by 9 casserole dish with tortilla chips and top with a layer of the chicken mixture. Repeat the layering until all the chicken mixure is used. Cover and bake 35 minutes at 350 degrees. Uncover and bake 10 minutes more.,My family loves this casserole and we have made it for many years. It tastes great left over too.
