Ingredients:
2 c. sugar
1 c. vegetable oil
4 eggs
2 c. flour
2 t. baking powder
2 t. baking soda
2 t. cinnamon
1 t. salt
3 c. grated carrots, packed
8 oz. cream cheese, softened
1/2 stick butter
1 pound powdered sugar
1 t. vanilla
1 c. chopped pecans

Directions: Mix sugar and oil. Add eggs and beat well. Sift dry ingredients together and add to this mixture. Add carrots and mix well. Bake in two 7 by 11 round pans or one 13 by 9. (grease and flour pans) Bake for 35 minutes at 350 degrees or until cake tests done. To make the icing, cream butter and cream cheese together. Mix in powdered sugar and vanilla and beat until fluffy. Stir in pecans and mix well. Frost cake when completely cooled.,Father's Day always comes during the wheat harvest season. We always make this cake to take to the field for my dad. It is his favorite!
