Ingredients:
1 1/2 cups sugar
1/2 cup oil
3 eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
2 cups carrots, grated
1/2 cup raisins
1/2 cup coconut
1/2 cup raw apple, diced
1/2 cup nuts

Directions: Combine sugar, oil, eggs and vanilla in a large bowl, set aside. Sift together flour, baking powder, salt and cinnamon. Add dry ingredients to liquid ingredients and stir until just moistened. Gently fold in carrots, raisins, coconut, apple and nutmeats. Spoon into greased muffin tins to about 2/3 full. Bake at 350°F for 20 to 25 minutes. Serve immediately with butter.
Notes: This muffin is good for breakfast or served with a dinner meal.
