6-8 medium potatoes, peeled, sliced, boiled until tender
2 lbs. ground beef, brown in skillet
1 small onion, chopped
1 package taco seasoning mix (optional homemade seasoning in directions)
1/4 cup water
1/4 cup margarine, melted
1/4 cup flour
2 cups milk
1 teaspoon salt
dash of pepper
1 cup cheese, grated
Directions: Simmer together potatoes, ground beef, onion, taco seasoning mix and water for 10 minutes. Stir into sauce, fold in cooked potatoes, spread half in buttered 7x11 inch casserole dish. Spread meat mixture over potatoes, then layer remaining potatoes over meat. Sprinkle cheese over casserole. Bake 15 minutes at 400°F until cheese melts.
To prepare homemade taco seasoning, 1 teaspoon salt, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon crushed dried red pepper, 1/2 teaspoon minced garlic, 1/2 teaspoon oregano, 2 tablespoons instant minced onion, 1 tablespoon cornstarch. Mix all together and use in place of 1 package purchased taco seasoning mix.
Notes: I often make 4 times the homemade taco seasoning recipe and store in a covered jar. It's so handy for recipes.
