Holiday Wild Rice Scallop

Ingredients:
1 cup wild rice
1/4 cup diced onion
1/4 cup diced green onion
1/2 cup diced celery
2 cups cream
salt and pepper














Directions: Cook wild rice in 3-4 cups salted water (1/2 t salt) for 40 minutes until tender and fully open. Drain rice. Add onion, green onion, celery, and cream. Add salt and pepper to taste. Lightly spray small casserole with oil (or butter lightly)and add rice mixture. Bake at 325°F for one hour until golden.

Notes: Wild rice is difficult to find here and is expensive. The wild rice mixes are NOT a good substitute.
