Ingredients:
1 egg
1/2 cup milk
1/4 cup oil
1 cup apples, raw and grated
1 1/2 cups sifted flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup brown sugar
1/3 cup nuts, chopped
1/2 teaspoon cinnamon

Directions: Beat egg with a fork. Stir in milk, oil and apples. Sift the dry ingredients together and add to the first mixture stirring just until moistened. Fill 12 paper lined regular muffin cups. Top with the nut crunch topping prepared with brown sugar, nuts and cinnamon. Bake 25 to 30 minutes at 400°F.
