Ingredients:
1/2 cup onion
2 cans hominy, drain and reserve juice
1/4 cup hominy juice
1 1/2 teaspoons pickled jalapeno juice
1/4 lb. grated cheddar cheese
5 slices bacon, crisp fried and crumbled
1/2 cup fresh Anaheim pepper - chopped
dlices of pickled jalapenos

Directions: Saute onion in small amount of bacon fat and set aside. Heat hominy in separate pan. When heated, add hominy juice and jalapeno juice, bring back to high temperature and add 3/4 of the cheese. When cheese melts, add 1/2 of the bacon and the chopped pep
