Ingredients:
2 large egg plants, peeled and chopped
2 tsp. salt
2 tablsp. olive oil
2 bell peppers, diced
1/4 tsp. ground white pepper
2 1/2 lbs. tomatoes, peeled
4 cloves garlic
2 ears fresh corn, cut from cobs

Directions: Dice tomatoes in 1 inch pieces and place in bowl. Put corn in a separate bowl. Dice green pepper in 1/2 inch pieces and add to corn. Chop egg plants in 1 1/2 inch pieces; add salt and place in separate bowl. Add oil to large frying pan or small wok. Prehe
