D's Beef Enchiladas

Ingredients:
3 cups shredded cooked beef
2 cans enchilada sauce
1 1/2 cans cream of chicken soup
1 chopped onion
1/2 chopped bell pepper (optional)
Tabasco sauce
1 (4 oz.) can green chiles
1/2 teaspoon garlic powder
1 (small) can chopped olives (optional)
1 package 8 inch flour tortillas
1 (8 oz.) package grated Cheddar cheese
fresh parsley for garnish (optional)
sliced olives for garnish (optional)
sour cream (optional)






Directions: Cook onion and bell pepper in the microwave until transparent. Mix onion and peppers, 1 can enchilada sauce, 1 can cream of chicken soup, green chiles, garlic powder, olives, and Tabasco sauce to taste. Stir beef in gently just until mixed. Place 2 to 3 generous spoonfuls of meat mixture on tortilla, top with sprinkling of cheese, and roll up. Place seam side down in 9x13 inch pan, and repeat until all meat mixture and tortillas are used. Combine 1 can enchilada sauce and 1/2 can cream of chicken soup and pour over top of enchiladas. Reserve remaining soup for other uses (or add to mixture if a more creamy sauce is preferred). Bake 1 hour at 325°F. Top with remaining cheese. Garnish with fresh parsley and sliced ripe olives if desired, and serve. Can be topped with sour cream if desired.
