Sharon's With or Without Rice Chicken

1 stick (8 tablespoons) butter
1 can large mushroom soup
1 package onion soup mix
1 1/2 cans water
1 cup rice
1 fryer chicken, cut up

Directions: Preheat oven to 325F. Melt butter in covered roaster and then mix in the other ingredients; arrange chicken pieces in the roaster, cover and roast for 1 hour and 15 minutes. Makes 4 generous servings. Version 2: Place chicken pieces in well-oiled pan. Throughly combine soup, onion soup mix, water and 1/2 cup low-fat sour cream or yogurt instead of the butter. Do not add the rice. Spread the mixture over the chicken pieces in roasting pan and sprinkle with 3 oz. of chow mein noodles. Roast as above.
